BBQ Roasted Vegetable Pizza.

 
I made this rather yummy pizza a fair few weeks ago now and as such have been my usual disorganised, 'I lose everything' self and cannot find the pictures I took of it anywhere. Luckily though I posted this picture on facebook the day I made it so I can at least show you a picture of the almost finished product.
 
I actually came up with this recipe myself as part of my Food Tech course at school and I'm really pleased with it. Roast veg always has a really lovely flavour so provides a great topping and the bread is really soft and flavourful with the addition of sundried tomato pieces. The sundried tomatoes also give the bread a really nice peachy colour which, looks quite cool and attractive too. Finally, the BBQ pizza sauce is delicious and goes perfectly with the veg and pizza dough.
 
This recipe has quite a few ingredients to it and does take a bit of time to prepare as you obviously have to chop all of the vegetables, make the bread from scratch and then make a homemade pizza sauce but, I would deffinately reccommend giving it a go if you are a big pizza fan as it has a delicious flavour and is deffinately worth the preparation time at the end. It also makes a great alternative to the shop bought pizza and provides vegetarians in particular with a nice new, unique flavoured pizza not available in the shops, as often the pizza flavours available to vegetarians can be quite limited. Still, this pizza is very much for anybody who likes the sound of it, so give it a go if you like and if you do I hope you enjoy it!
 
 
Recipe 
 
250g Bread flour
50ml olive oil
150ml warm water
5g dried yeast
3g sugar
5g salt
25g Sundried tomatoes
1 400g tin chopped tomatoes
2 tbsp. tomato puree
1 Onion
2 tbsp. BBQ Sauce
75g Cheddar
50g Mozzarella
1 Red Onion
50g Mushrooms
1/2 Courgette
1/2 Red Pepper
1/2 Yellow Pepper
Dried Mixed Herbs
 
 
Method
 
1. Place the bread flour in a large mixing bowl and add all of the other base ingredients: salt, dried yeast, sugar, warm water, olive oil, sundried tomatoes. Mix to form a dough and then knead on a floured surface until even textured, springy and no longer sticky.
 
2. Roll the dough into a circle to fit a large round pizza tray. Cover and leave to rise in a warm place.
 
3. Meanwhile, prepare all the topping ingredients: peel and chop the red onion into 8 wedges, peel and dice the onion, grate the cheeses, wash and slice the mushrooms, chop the peppers and chop the courgette.
 
4. Roast all of the prepared vegetables (except the diced onion) in a tray with a bit of olive oil.
 
5. Prepare the pizza sauce by frying off the diced onion in a little olive oil. Add the tin of chopped tomatoes, BBQ Sauce and tomato puree and warm through. Puree the sauce.
 
6. Spread the base with the pizza sauce and sprinkle with the grated cheddar. Add the roast vegetables to form an attractive finish and scatter with mixed herbs and grated mozzarella.
 
7. Bake at 200C for 15 to 20 minutes until the base is crisp and the cheese is starting to brown.
