Okay, so I am currently sat here wondering as to why I didn't jump at the chance to go into clearing and head up to Uni in Liverpool this year as it is what I am hoping to do next year anyway. I guess it just scared me that one second I could be at home with my family having turned down my offer from Plymouth University and instead be thinking about what I could do for the next year at home without having a second thought about Uni and then suddenly, I was thinking about Uni again and it all seemed too sudden and soon and there would be so much to sort out in such a short space of time, such as my accomodation and student finance. Realistically I know it was possible but, for such a worrying, nervous wreck (Thanks very much for those genes by the way Mum :P) I decided to take a year out in the hope of saving up some money and thinking more about the course I actually wanted to do. Fingers crossed I've made the right decision.
 
I think I feel this way right now largely because I see alot of my friends enjoying their Fresher's weeks so much and then I'm just sat here at home not really doing anything with my time except watching Downton, baking some cupcakes and occassionally popping on the old MJ wii dance experience. Then again, I know I haven't missed out altogether as I can do the same as them next year, I just don't want to look back in a years time and think I wasted a whole year when I could have been doing something. I think it might be better when I actually start working as then I'll feel like I am doing something worthwhile and hopefully I can also save up some pennies too so that I can do a few things and spend time with my friends that are still here aswell as save up for Uni next year so, that I can have a nice time, as this year I literally would have been bankrupt and not able to afford to do anything let alone pay my rent.
 
Still, having said that I am absoloutely terrified about actually starting work and I have two induction days at Sainsburys this Thursday and Friday which, I am rather nervous about so hopefully they will go okay. 18 hours of induction :O. That seems like rather alot. I have no idea what it involves either. I also saw a young guy in Sainsbury's today drop a crate of expensive wine and it literally went everywhere. Bless him, it was awful and I felt so sorry for him and really wanted to go and help. God, I hope that doesn't happen to me.
 
In all honesty though I do often sit here and hope that I've made the right choice but, I know I just need to give it some time and hopefully I will find that I have. Hopefully I can also do some work experience early next year as well and go into schools to teach Food Technology as that is what I'd like to do in the future. I am also sitting here tonight regretting not going to University though because I am a hopeless romantic who believes in the fairytale romance, her prince charming and that my love life will eventually play out like in the movies. Ofcourse it won't but, somehow I still manage to convince myself that had I moved to Liverpool this year I would have inevitably met Suso by now and we'd currently be falling madly in love. You know, as you do with a professional footballer. This will obviously never happen and I will most likely never even meet him, living in Liverpool or not but still, can't blame a girl for dreaming ay... about a gorgeous, talented, spanish footballer. No, that seems pretty reasonable to me.
 
This week has been pretty good though. Last Saturday I had an amazing time at my friend Jamie's house having some drinks with some friends I haven't seen in a while which was lovely and very funny. I baked Chocolate and Peanutbutter cupcakes on Tuesday which, were lovely but I'm going to try and improve the recipe this week before sharing it. I baked cupcakes with my incredible little nephew Charlie aswell whilst, listening to Busted and McFly which was actually an incredibly fun way to spend the day. I also made incredibly scary Teletubbies masks with him which, are terrifying and look nothing like the Teletubbies but, he seems really happy with them so thats good. Bless two year olds, they appreciate whatever you give them. Isn't he adorable?
 
 
 
I had my first proper job interview on Monday too which was very scary but I got through it and also got the job which was a huge shock but, was also great news for my dwindling bank account as long as I am not a terrible shelf stacker and manage to keep the job. Finally, I got to watch Liverpool beat Norwhich 5-2 on Saturday so, I was chuffed to bits and it was a very nice way to round off the week.
 
On to the outfit. I love this jumper. It is so cosy and bright and I love the aztec print and vibrant, contrasting colours. I got it from the Ragged Priest store I think it was on ebay last October and I'm so glad I did. I was determined to win it and ended up paying about £32 for it I think but it is deffinately worth it and it is keeping me nice and warm at the moment in this freezing weather. I also love my Disco Pants, they are so comfy and feel amazing although, I do often feel like I'm about to start a workout when I wear them or like I'm an extra in Fame. I don't think thats necessarily a bad thing though as I love them none the less and would really like another pair. My normal leggings always fall apart too so I like that these are alot more hard wearing and less likely to get holes in them on the first time of wearing. I seem to throw away like 5 pairs of leggings every week so I would deffinately reccomend getting these as they are much stronger and thicker which, is also good for the chilly weather that is coming and I think they are actually well worth the money at £16.99 a pair. I also love that they are shiny as it makes them a bit more exciting and also allows you to wear them on a night out too paired with a nice top if you like. 
 
I adore vans. I wear them with pretty much every outfit and I love my burgundy ones but, I don't seem to wear them very much as they don't go with as much as my blue or black ones but, today I decided to be very colour co-ordinated with my burgundy vans, burgundy jumper and my burgundy hat and I think my vans work really well with the outfit. I am never colour coordinated normally as you will probably see in the future and most of my outfits are normally a clash of random different colours which probably don't go together at all, nothing wrong with a bit of colour though. I love the black laces too and I think they go really well with the burgundy colour and I think it makes them have more of a rock vibe about them which I like. I love the print on this ASOS t-shirt too and the bit of sparkle it has and this is actually the newest addition to my wardrobe however, I'm still not sure as to whether I think it really suits me as it doesn't seem to hang quite right on me but, nevermind, I love the print and I like the casual, comfy feel to the top so, in the wardrobe it goes.

Weekly Wish List.

I have wanted a Pork Pie hat now for absoloutely ages and I love the shape of the Topshop ones. I think it's very cute, has a rock vibe to it and will be brilliant to finish off any outfit. Originally when I had the money to buy one I decided that £26 was ridiculously expensive and now that I actually want one I can't afford it. Typical. They have also been out of stock for a while now and only just came back in so, fingers crossed I will be able to get one before they sell out again. I could always ebay it but, they actually often sell for more on ebay than they do in Topshop.
 
 
 
I saw this gorgeous dress on the Sweet Monday blog about a week ago and I've wanted it ever since. I love the monochrome colours and the embellishment to the top makes it very pretty and perfect for a special occassion while the white flared, skater style to the bottom makes it very girly and feminine. I do think it's rather exxpensive though at £60 :O. Damn. I've never spent anywhere near that much on a dress before but, I do really like this one. It's already selling out really fast though and there is only limited stock available so by the time I finally get some money in the bank I think it will be too late. I would love to pair this with the Pork Pie hat above and the studded heels below, I think it would look great for a night out.
 
 


I adore these spiked platform heels, they have a rock vibe which I love and I think they would look great on a night out with the Pork Pie hat perched on top of my head too. I love studded footwear at the moment but, I haven't actually got any so I'd love to invest in these. I really need some black heels as well after selling my only pair about a month ago. I fell in love with a pair of ankle boot heels from New Look last year and bought them even though they were a size too big but, as I am terrible at walking in heels at the best of times, a size too big made it pretty much impossible for me to move at more than 1mph so I decided to get rid of them. I'd love to replace them now with these but, again the price is pretty high at £43.99 and I wont be able to afford them for at least another 3 or 4 weeks so I might lose out on my dream shoes.
 
 
I love the leather sleeved jacket trend at the moment as I mentioned before and I love this denim jacket from Missguided. It's very cool, casual and versatile and I think it will look great with skinny jeans and a t-shirt or even a pretty, feminine dress so, I think it would be a great item to purchase but, it is very popular at the moment as it's very on trend and also quite reasonably priced so, it keeps selling out.
 
 
 
I love the colour of this lipstick, it's a very pretty, matte pink and is very subtle and I would love to get it but, once again I have never spent this much on lipstick before. £13 :O Goodness. We'll see.

This perfume smells lovely, very pretty and fruity and I will definately be purchasing this when I get some pennies as I have pretty much emptied every perfume bottle I own now. Maybe I should have looked for a job in Debenhams, I could have had a sneaky spritz of a perfume everyday for free.

Twin Atlantic and Billy Talent Concert Tickets
 
I adore Billy Talent Talent and Twin Atlantic and they are two of my favourite bands so I would love to go and see them in concert. Both are performing in Birmingham in November I think it is aswell which would be perfect as my friend Jamie is at University in Warwick and my Auntie lives in Leicester but, I just can't afford them at the moment. I did get to see them both at Reading Festival this year though so thats good and they were both incredible! Hopefully I'll get to see them again one day.
 
I am in love with this camera, it is gorgeous and red! I love red. I have wanted a good camera for ages now as I love taking pictures and I keep having to borrow my Dad's camera at the moment as mine has a big crack in the screen, is about 7 years old, doesn't take great pictures and sometimes decides it doesn't even feel like taking pictures that day at all. I've read really good reviews about this camera aswell so, I'm sure I will love it. This is the only item on my wish-list that I have managed to get so far aswell and it probably will be the only item I do get but, I will have to wait until December to get it as it is my christmas present from my lovely Mum and Dad. Well hello there. I am a little bit in love with this boy at the moment however, he is appearing on my wish-list purely to show that I would like to buy a Liverpool Home Shirt soon with Suso on the back. To be honest though he is deffinately on my wish-list too and I would like to get him far more than any of the other items on here. I'd happily trade in my Camera for Christmas to have him for Christmas.

I would love a new phone too as I have had my LG Cookie for about 3 years now and it's not looking very healthy. I would also like a bit better quality phone but, I don't want to pay ridiculous amounts as I don't really use my phone very much. I really like this Blackberry as my favourite colour is purple and I would also like to be able to use the internet on my phone as I just think it would be useful if I was out or on holiday etc. But lets see how work goes first before I start buying anything. I might be terrible at the job or they might hate me and fire me after a week so no money or new items for me. Hopefully not though. I'll try my best.

Ello ello. I am feeling rather happy today. Largely because Liverpool beat West Brom in the Capital One Cup yesterday which, feels amazing after our poor start to season. We're playing really well but, nothing seems to be going our way and we really need a goal scorer. I love our young boys though, they are incredible!


I also got offered a job at Sainsburys on Tuesday which, means I can start earning some pennies and buy some bits and bobs for myself aswell as be able to afford Christmas presents which is nice. I love christmas and I'm already very excited and I can't wait to start buying presents for people or to pop on the old Christmas cd's and have a nice festive sing along. The Muppets Christmas Carol DVD must also come out aswell. However, now I've actually got the job I am terrified and incredibly nervous about starting. I'm so shy and quiet and I'm worried they wont like me and it's also a night shift which, is a bit scary anyway but, I also might not be very good at the actual job and I'm worried I will be really slow at stacking the shelves as I'm not very strong so, they might sack me. Fingers crossed they won't :/.

When I start earning some money I really want to buy the Liverpool Home Shirt. I love the vintage feel to it this season, it's very simple and classic and I love the retro collar. I'd also like to get this gorgeous young man's name on the back.


He's just a little bit attractive wouldn't you say? And in football terms, he's going to be, and pretty much already is, an incredible player.

I also had a lovely afternoon and evening yesterday with one of my best friends; Jamie, to say goodbye to him before he goes up country to start Uni this weekend. We watched the film Arthur with Russel Brand, which is absoloutely hilarious and then we had some delicious Enchiladas and Nachos. I love mexican food. Anything with excessive amounts of cheese is good. I am going to miss him lots now though as he's the friend I spend the most time with and he's so lovely and funny and makes me laugh constantly but still, I hope he has an amazing time up in Warwick and I will see him in December too so not a ridiculously long time away.

Anyway, as I am feeling pretty chirpy today I decided to wear some yellow as it's bright and cheerful. I have never been sure about my Topshop Mustard dress though, I mean I really like it and I especially love the vintage pleating to the bottom but, for some reason I just never thought it suited me. I saw it in the shop and loved it and I also saw it on bloggers like Monica Barleycorn and Llymlrs who looked lovely in it but, I just wasn't sure about it on me. However, recently I have discovered a way to wear it and an outfit to wear it with which I really like as it adds a nice splash of colour to a quite simple and otherwise dark and plain outfit.

I adore my denim jacket and I wear it all the time. My Mum gave it to me about a year ago because she said it was a bit small for her and it's perfect. It's got a vintage, grungey feel to it and I think it goes really well with this outfit. I deffinately needed it today aswell as it's absoloutely freezing. I was only outside taking these pictures for about 10 minutes and I already think I've developed a cold. Blanket and hot chocolate here we come. I also love wearing my geek glasses to give a grungey vibe too although, I'm not sure if I am brave enough yet to wear them out in public. It's not so long ago that my friend asked me if she could borrow them for fancy dress so, day to day wear I'm still not so sure. Finally, I'm wearing my creepers again. I really like them. I wasn't sure about them at first as they have a polystyrene sole which, I thought was quite poor quality for £19 but, because of the sole they are not quite as bulky as the rubber sole ones which I think's quite nice as it makes them a bit more dainty and not such a bold, statement. Although, now I actually would like to invest in some of the bigger, chunkier ones. I love the blue ones.

The only problem with these polystyrene soles is that it makes them just a little bit slippery. I remember the first time I wore them; I walked through my kitchen, skidded on the tile floor and fell straight over, flat on my back. I then cleverly continued to wear them out and found myself skidding around the shop floor of Tesco. This time I managed to stay on my feet though however, I'm still not sure how great or even normal I looked hobbling around the shop, slipping all over the place. Luckily, I've worn them down a bit now though so no more falling over hopefully. However, I'm still not very steady and often find myself tripping over nothing or stumbling when I'm standing still.

Anyway, I will leave you now with this lovely song by Angels and Airwaves. I love their songs, they are all so sweet and mellow and have really beautiful lyrics. I also love Tom Delonge. Who doesn't love Tom Delonge?

Black Forest Gateau Cupcakes.



 

 
 

Good evening! I thought I would post my first cupcake recipe tonight as these Black Forest Gateau cupcakes are absoloutely delicious but, then again with a combination of chocolate, cherries and cream I think it would be impossible not to be delicious.
 

I love baking and cooking and I have done since I was a little girl. I don't really know where my love of baking came from though as I don't have memories of spending hours in the kitchen with my Nan or my Mum learning how to cook when I was little like some people do, even though they are both brilliant cooks. The main memory I have of me and my Nan in the kitchen is of us making flapjack together. She walked back into the kitchen to find cornflakes all over the floor and scattered accross every worksurface and just burst out laughing and shouted 'What the bloody 'el are you doin!?'. Maybe that's why she never let me cook with her again. Then, although my brother does like cooking he's also more than happy to let someone else cook for him and as for my sister... she burns literally everything, even food I didn't know it was possible to burn. I remember her telling me that the reason my little nephew Charlie once didn't eat my Mum's dinner was because he's used to his Mummy burning everything and he now thinks that all food should taste burnt. Still, I have always loved baking and I try to bake as much as possible, that is when my Dad actually lets me go to the supermarket with him to buy ingredients as I always end up making the shopping bill about £20 more expensive.

I got this chocolate cake recipe from watching Hayley Tamaddon's appearance on Celebrity Britain's Best Dish about 4 years ago now and I love it. She made a Chocolate Fudge Cake which, I made a few years ago too and it is really yummy but, I always use her chocolate sponge recipe to make my cupcakes. They work out so light, soft and moist and have a lovely delicate chocolatey flavour considering they don't really have that much cocoa powder in them, and this subtle chocolate flavour goes perfectly with the refreshing cherry sauce and rich, velvetty cream. I'm going to be making these chocolate cupcakes again tomorrow aswell as I'm going to make some Chocolate and Peanut butter cupcakes. I'm pretty sure that there is really nothing better than chocolate and peanut butter and I am literally in love with Reeses and Peanut Butter Kit Kat Chunkys.


This is one recipe I am deffinately going to add to my future Cupcake Bakery menu. Fingers crossed my dream will one day come true but, for now I will keep baking my Black Forest Gateau Cupcakes for my family and I hope you enjoy them too!

Black Forest Gateau Cupcakes

Recipe

For the Chocolate Cupcakes - Makes 12


110g (4oz) butter at room temperature
220g (8oz) dark brown sugar
2 large eggs
165g (6oz) self raising flour
55g (2oz) cocoa
½ tsp bicarbonate of soda
½ tsp baking powder
140ml (1/4pint) sour cream

For the Cherry Brandy Filling

1/2 Tin of Hartley's Cherry pie filling
1 tbsp. Brandy

For the Topping

600ml Double Cream
Dark Chocolate Curls
The rest of the Hartley's Cherry Pie filling

METHOD:
 
Pre-heat the oven to 180°c.
  • Place the cake cases into a 12 hole cupcake tin.
  • For the chocolate cupcakes, cream together the butter and sugar using an electric whisk. Gradually beat in the eggs and add the sour cream. Sieve together the flour, cocoa powder and bicarbonate of soda and delicately fold into the mixture.
  • Divide the mixture into the 12 cake cases (I use muffin cases) and bake for 15 minutes or until the sponge springs back up when you press the surface lightly.


  • Allow the cupcakes to cool and prepare the Cherry Brandy filling. Take half a tin of Hartley's cherry pie filling and add 1tbsp. of Brandy and mix. To be honest I didn't really measure how much brandy I put in and just went on taste so just do the same. You might not want any brandy or you might like it a bit boozy, your choice.
 Once the cupcakes are cool, use an apple corer to create a small well/hole/dip in the cupcake and add about 2tsps. of the cherry brandy filling.

 
  • Finally, beat the double cream with an electric whisk until light peaks form and then you can either scoop it straight onto the cupcakes or use whatever piping bag and nozzle or other piping equipment you wish. Last of all, top with a cherry from the tin of Hartley's Cherry pie filling and dust around the edge of the cream with some dark chocolate curls. Yum.

Excuse my awkward looks and stances in these pictures, I felt a little odd taking pictures of myself and my outfit the other day as it's something I've never done before. I'm usually the one trying to avoid the camera as someone always manages to capture a very unflattering, unattractive picture of me, hence why I am looking down in most of these photos. I took myself off into the garden to take these, hoping that my Mum wouldn't notice that I had left the house as she was hoovering up but, ofcourse being the worrier that my Mum is, she thought a mad axe man must have snuck into the house and kidnapped me so she came outside to look for me. She was very confused as to why I was posing and taking pictures of my outfit whilst hiding behind the house and I felt very awkward and embarrassed myself.

On to the actual outfit. I love my polka dot dress, it's very cute and girly and I love polka dots so it is probably one of my favourite dresses that I own. I originally bought it in February to wear on my 18th Birthday as I thought it was very sweet and simple but, when it arrived I was a bit worried that it wouldn't be dressy enough and would be a bit too casual for a special 18th Birthday meal but, I'm so happy I kept it as I wear it all the time, dressed up or down. I love to pair pretty, vintage, girly dresses with some grungey accessories like my beanie and geek glasses and some creepers or vans.

I adore my Liverpool Beanie aswell and I pair it with every outfit at the moment as I like the grungey vibe it gives. I found it buried in the bottom of my wardrobe when I decided to start tidying my room for the first time in what seemed like forever. I literally never throw anything away so it's taking a long time to sort through everything and I currently have a huge mountain of things in the corner of my room which I have no idea why I kept in the first place but, which now deffinately need to be thrown away as they have made my room look messier than it did before I started tidying. As I said, I currently wear this hat with everything, no matter how much Mum tells me it looks silly paired with a t-shirt, shorts and sunglasses on a sunny day. It is also a Robbie Fowler hat which, I love as I am a huge Liverpool fan just like the Padre.

I bought my Dorothy perkins jacket back in April and it turned out to be perfect for Summer this year as it is light but, also has a hood which was perfect for our British Summer as it consisted largely of a small amount of heat and a lot of rain. I am a big fan of the khaki military style jackets and I would have really loved to get this one from River Island aswell.
I love the faux leather sleeve trend at the moment. It is all sold out in my size now though so nevermind, not that my very limited funds could have afforded it at the moment anyway. Maybe I'll find it on ebay in a few months. As a poor person ebay is where I purchase most of my wardrobe so, thank god for ebay!

I thought I would have a go at starting my own blog; courtney likes cupcakes. because I have wanted to start a blog for quite a while now and I love reading other people's blogs so, I thought why not have a go myself.

I'm hoping to post about lots of different things each day from cupcakes and recipes to fashion and music so that I can keep a track of my recipes and also maybe have some memories to look back on in a few years time aswell. I'm hoping that some other people might find it interesting to read too but, if not hopefully I can at least give people some tasty new recipes to try.

I am 18. I love; baking, clothes, music, photography and writing. I live in Cornwall with my incredible Mum and Dad and I have recently finished College and am taking a Gap Year at the moment before going off to University next year so that I can save up some pennies and hopefully decide on what I want to do in the future. I still live in hope that my numbers will soon come up on the Euromillions so that I can jet off to New York and open a Cupcake Bakery but, I think I need a back up plan just in case that doesn't happen. The back-up plan at the moment is Food Tech Teaching which sounds quite exciting to me so for now I'll put the Cupcake dream to one side.

Step one in my gap year is to find a job so that I can start earning some pennies and then we'll see what else happens from there. As for now, I think it's time to start my blog.
